Ravioli with Cheese Sauce

Ingredients
- 300 g flour
- 3 eggs
- 2 tbsp oil
- Salt
- 2 egg yolks
- 125 g mixed herbs (basil; thyme; wild garlic; parsley)
- 200 g aged mountain cheese (grated)
- 100 g crème fraîche
- Salt
- Pepper
- 300 g cream cheese
- 2 tbsp freshly grated Parmesan
- 100 g whipping cream
- Salt
- Pepper
- Nutmeg (freshly grated)
- 20 g pine nuts
- 1 bunch parsley (chopped)
Instructions

Combine the dough ingredients in a bowl and knead well; if the dough is too dry, add a little cold water. Wrap the dough in cling film and let it rest for 30 minutes.

For the sauce, bring cream cheese with cream, parmesan, and crème fraîche to a boil. Season with salt, pepper, and nutmeg.

Divide the dough into portions and roll each into a very large thin sheet.

On half of the sheets, place small dough dots about 5 cm apart using a teaspoon; cover with the other half and press edges together. Cut into squares with a pastry cutter.

Cook the ravioli in boiling salted water for about 3-5 minutes until they rise to the surface.

Toast pine nuts in a dry pan until golden brown without oil.

Remove the ravioli with a slotted spoon, place on preheated plates, pour sauce over them, and garnish with parsley and toasted pine nuts.
