Spaghetti Tortilla

Ingredients
- 350 g spaghetti
- 1 onion
- 1 Garlic clove
- 2 tbsp olive oil
- 300 g tomatoes
- Salt
- Pepper (freshly ground)
- 3 tbsp butter
- 75 g Parmesan
- 4 eggs
- 125 g mozzarella ball
- 75 g salami
- chopped parsley
Instructions

Cook pasta in plenty of boiling salted water until al dente, then drain, rinse with cold water and let rest.

Briefly blanch tomatoes for a few seconds, cool, peel, quarter, deseed and dice into small cubes.

Peel and cube onion and garlic; sauté in hot oil in a pot. Add tomatoes, season with salt and pepper, and simmer for about 5 minutes.

Cut pasta into smaller pieces and mix with 1 tbsp butter and parmesan.

Whisk eggs and add to the tomato mixture with the pasta, stirring well. Dice mozzarella and salami.

Heat 1 tbsp butter in a large non-stick pan. Add half of the pasta mixture, top with diced mozzarella and salami, cover with remaining pasta and let set for about 10 minutes.

Carefully flip the omelette using a large lid, add remaining butter and bake for about 5 more minutes; serve sprinkled with parsley.
