Turkey Breast with Orange

Ingredients
- 4 turkey breast fillets (220 g each)
- 1 tbsp Medium-hot mustard
- 125 ml orange juice
- 1 tbsp curry powder
- 1 tsp liquid honey
- 1 tbsp oil
- Salt
- clarified butter
- 50 ml port wine
- 4 figs
- 1 Organic Orange
- 1 tsp butter

Preheat the oven to 180 °C (convection). Wash and pat dry the meat. Mix mustard with a third of the orange juice, curry powder, oil, honey, and salt. Brush the mixture onto the meat and sear both sides in hot clarified butter. Transfer to an ovenproof dish and bake for about 30 minutes. Meanwhile, deglaze the pan with the remaining orange juice and port wine and season.

Dice the figs and bacon and sauté together in a separate pan. Wash, dry, quarter, and slice the orange. Whisk butter into the sauce and lightly whip it with a hand mixer. For serving, cut the turkey breasts into thicker slices and arrange them between orange slices. Sprinkle with figs and bacon. Serve the sauce on the side.
