Chicken with Olives

Ingredients
- 4 chicken thighs (with skin)
- Salt
- ground pepper
- 2 tbsp olive oil
- 2 onions
- 2 Garlic cloves
- 200 ml dry red wine
- 400 g crushed tomatoes
- 90 g black olives
- A handful of sage leaves
Instructions

Preheat the oven to 180°C (350°F).

Wash and pat dry the chicken thighs, then season with salt and pepper. In a roasting pan, brown them in hot oil on all sides.

Slice the onions into rings and crush the garlic cloves; add both to the pan and sauté briefly.

Pour in the red wine, let it reduce slightly, then stir in the crushed tomatoes.

Return the pan to the oven covered and bake for 30-40 minutes.

About 10 minutes before the end, remove the lid, turn on the broiler, and add the olives.

Wash and dry the sage leaves; set aside two for garnish and finely chop the rest.

Remove the chicken from the oven, sprinkle with sage, and arrange rusticly on a wooden board. Serve the chicken with olives alongside pasta or salad if desired.
