Ingredients

  • 800 g spaghetti squash (1 spaghetti squash)
  • Salt
  • 2 Spring Onions
  • 150 g cherry tomatoes
  • 0.5 lemon (juice)
  • 1 Garlic clove
  • 1 tbsp White Wine Vinegar
  • 100 ml vegetable broth (instant)
  • 5 tbsp sunflower oil
  • Salt
  • Pepper (freshly ground)
  • parsley (for garnish)
  • lime slice (for garnish)

Instructions

    Cook the squash in plenty of boiling salted water for about 20-30 minutes until tender (the shell should indent slightly). Remove, let cool, halve and seed. Scrape out the flesh with a fork to create "spaghetti" strands and place in a bowl.

    Trim, wash, and finely chop spring onions and cherry tomatoes; add to the squash. Drizzle with lemon juice and gently mix.

    Peel the garlic and blend it with vinegar, vegetable broth, oil, salt, and pepper until smooth. Pour over the squash mixture and let sit for at least 30 minutes to absorb flavors. Before serving, adjust seasoning, plate on dishes, and garnish with parsley and lime slices.
