Ingredients
- 1 kg red cabbage
- 3 apples
- 80 g hazelnuts
- Salt
- Pepper
- 4 tbsp mild red wine vinegar
- 4 Tbsp sunflower oil

Wash the cabbage, remove outer leaves, slice into fine strips and blanch in plenty of salted water. Drain and shock with ice water. Wash apples, core them and dice small. Roughly chop nuts and lightly toast in a dry pan. Mix everything except 2 tbsp nuts together and marinate with salt, pepper, vinegar and oil.

Let it rest for at least 30 minutes, taste again, then serve in bowls sprinkled with the remaining nuts.
