- 400 g spaghetti mini (or capellini)
- 4 eggs
- 80 g Parmesan
- 0.5 bunch spring onions
- 3 tbsp clarified butter
- Salt
- Pepper (freshly ground)

Cook the spaghetti mini according to package instructions. Beat the eggs with salt and parmesan. Wash, trim, and slice the spring onions into thin rings; mix them with the drained spaghetti and fold in the beaten egg mixture. Heat clarified butter in a pan and, using metal rings, cook 8 pasta pancakes in a larger skillet over low to medium heat for about 4-6 minutes per side until golden yellow. Keep finished pancakes warm in an oven at 100°C.
