Piquant Coconut Rice

Ingredients
- 350 g long grain rice
- 700 ml coconut milk
- 1 pinch ground turmeric
- 0.5 cinnamon stick
- 1 clove nutmeg
- 1 stalk lemongrass
- 2 tbsp Soy sauce
- 2 onions
- 1 tsp rice flour
- Vegetable oil for frying
- Cucumber slices

Rinse the rice and drain. Bring coconut milk with turmeric, cinnamon, nutmeg, pressed lemongrass, and soy sauce to a boil. Add the rice, cover, and simmer over low heat for about 20 minutes until cooked.

Peel the onions and cut into rings. Toss them in flour and fry in hot oil for 4-5 minutes until golden brown. Drain on paper towels.
