Ingredients

  • 2 chicken breast fillets
  • 200 g oyster mushrooms
  • 1 tsp freshly grated ginger
  • 1 chili pepper (finely chopped)
  • 150 ml coconut milk
  • 300 ml chicken broth
  • 1 tbsp lime juice
  • fish sauce
  • 2 tbsp parsley (chopped)

Instructions

    Wash the chicken, pat dry and slice into thin strips.

    Clean the mushrooms and cut into bite-sized pieces.

    Bring coconut milk with broth, ginger, and chili to a boil. Simmer gently for about 5 minutes. Add the meat and mushrooms and simmer another 5-8 minutes. Finally add parsley, season with fish sauce and lime juice.
