Ingredients

  • 150 g soy strips (ready-made)
  • 300 g carrots
  • 3 spring onions
  • 2 Garlic cloves
  • 100 g green bell pepper
  • 1 red chili pepper
  • 2 Eggs
  • 1 pinch cayenne pepper
  • Salt
  • 60 g flour
  • 150 ml Vegetable broth
  • 1 tsp sugar
  • 2 tbsp rice vinegar
  • 2 tbsp Light soy sauce
  • 1 tsp Cornstarch
  • 50 ml peanut oil (for frying)
  • 1 tbsp chopped coriander

Instructions

    Parboil the soy strips according to package instructions and drain.

    Peel the carrots, slice into thin rounds, then cut into fine strips. Trim, wash and finely slice the spring onions. Peel and finely chop the garlic. Wash the bell pepper and chili, halve, remove seeds, and cut into fine strips.

    Beat the eggs with cayenne pepper, salt, flour and a little water to make a thick batter.

    For the sauce whisk together vegetable broth, sugar, vinegar, soy sauce and cornstarch.

    Heat oil for frying in a preheated wok.

  6. 6.

    Coat the soy strips in the batter and fry in hot oil for about 1 minute until golden brown. Remove and drain on paper towels.

    Optionally skim off excess oil and quickly stir-fry the vegetables with onion and garlic in the remaining oil. Add the prepared sauce, bring to a boil briefly, add the fried soy strips, season to taste.

    Plate the dish and garnish with chopped coriander before serving.
