Cheese Spaghettini with Garlic Croûtons

Ingredients
- 150 g white bread
- 3 cloves garlic
- 80 g Butter
- 100 g freshly grated Parmesan
- 500 g Spaghettini
- Salt
- white pepper (from grinder)
- herb leaves for garnish (optional)
Instructions

Break the white bread into small pieces. Peel the garlic and slice one clove into thin rounds.

Heat 2 tablespoons of butter. Toast the bread in it until golden brown, squeeze the remaining garlic cloves into the pan. Transfer to a plate lined with paper towels.

Whisk the remaining butter, add the garlic slices and brown lightly. Add Parmesan.

Cook the spaghettini in plenty of salted water according to package instructions. Drain (reserve 80-100 ml pasta water) and let stand. Add the pasta to the butter-cheese mixture, stir in 80-100 ml reserved pasta water. Season with salt and pepper and top with garlic croûtons. Garnish with herb leaves if desired.
