Soy Burger
The Soy Burger from Spoonsparrow is vegetarian and impresses with fresh ingredients!
Ingredients
- 170 g dried soybeans
- 1 Red Onion
- 1 small carrot
- 10 g ginger
- 80 g whole wheat breadcrumbs
- 1 egg
- Salt
- Pepper
- 4 tbsp sesame seeds
- 4 tbsp soybean oil
- 2 handfuls arugula
- 1 tomato
- 100 g cooked beetroot
- 4 whole wheat buns
- 2 tbsp sunflower seeds
- 1 handful alfalfa sprouts
- 4 tbsp Soy yogurt
Instructions

Soak the soybeans overnight in plenty of water. The next day cook them in fresh water for about 1.5 hours until soft.

Peel and finely dice or grate the onion, carrot, and ginger. Drain the soybeans well. Using an immersion blender break them down and mix with the onion, carrot, ginger, and breadcrumbs. Stir in the egg and season with salt and pepper. If needed add more breadcrumbs to make a firm mixture. Shape into 4 patties (use a burger press if desired). Coat each patty in sesame seeds and fry in hot oil for 4–5 minutes per side.

Wash, trim, and dry the arugula. Wash the tomato, remove the stem, and slice it together with the beetroot. Cut the buns horizontally and place a few leaves of arugula on the bottom halves. Sprinkle sunflower seeds, then lay tomato and beetroot slices on top, followed by one soy patty each. Add some sprouts. Spread 1 tbsp of yogurt on the top bun, place it over the patty, and serve.
