South African Vegetable Curry

Ingredients
- 1 large yellow bell pepper
- 1 corn cob
- Salt
- 1 small cauliflower
- 1 Zucchini
- 2 onions
- 150 g peas (fresh or frozen)
- 1 Carrot
- 2 tbsp oil
- 2 cm ginger
- 2 Garlic cloves
- 0.5 l vegetable broth
- 2 dried apricots
- 1 tbsp curry powder
- 2 Cinnamon sticks
- 4 pea pods (for garnish)
Instructions

Peel and finely chop ginger and garlic. Sauté onions with ginger and garlic in oil, add carrots and cook for 3 minutes, adding 2–3 tbsp broth if needed. Chop dried apricots and add them. Cook everything for another 3 minutes until liquid evaporates.

Add the remaining vegetables, curry powder and cinnamon sticks, stir briefly. Pour in a little broth and simmer covered for 5–8 minutes. Taste and serve on plates garnished with pea pods. Serve with rice.
