Soft Gingerbread Men
Soft gingerbread men from Spoonsparrow: The spicy Christmas cookies delight both young and old gourmands!
Ingredients
- 150 g butter
- 250 g honey
- 250 g brown sugar
- 100 g Ground Almonds
- 400 g flour
- 1 tsp cinnamon powder
- 2 tsp gingerbread spice mix
- 1 Organic lemon
- 1 tbsp cocoa powder
- 1 egg
- 1 tsp potash
- 2 tbsp rum
- 1 egg yolk
- 100 g powdered sugar
- 1 tbsp Lemon Juice
- red sugar pearls
Instructions

Add butter, honey and sugar to a saucepan in chunks and heat while stirring until the sugar dissolves. Transfer the mixture to a large bowl and let it cool.

Add almonds, flour, all spices and the egg, then knead thoroughly with a hand mixer (kneading attachment), adding more flour if needed. Mix potash with rum until smooth, add to dough and continue kneading until the dough shines and no longer sticks. Cover and refrigerate overnight.

Preheat oven to 180°C fan or conventional heat. Line a baking tray with parchment paper. Roll out the dough on a floured surface and cut about 10 cm gingerbread shapes using a template or by hand. Place the shapes on the tray, brush with egg yolk and bake for about 15 minutes. Carefully lift the soft gingerbread men from the tray and cool on a wire rack.

Whisk powdered sugar with enough lemon juice to make a thick glaze. Decorate the soft gingerbread men with the glaze and red sugar pearls. Let them dry well.
