Snowballs from Spoonsparrow are easy to make and perfect as a party or kids snack!

Ingredients

  • 3 eggs (medium size)
  • 80 g raw cane sugar
  • 100 g Spelt Whole Grain Flour
  • 150 g whipping cream
  • 1 packet gelatin powder
  • 250 g low-fat quark
  • 1 tbsp powdered sugar from raw cane sugar
  • 1 tsp vanilla powder
  • 50 ml Apple Juice
  • 75 g coconut flakes

Instructions

    Line a baking sheet with parchment paper. Beat the eggs and raw cane sugar in a hand mixer for 3 minutes until light. Add all the flour at once and fold it in. Spread the batter on the sheet and bake in a preheated oven at 180 °C (fan: 160 °C; gas: level 2–3) for about 15 minutes until golden. Remove and cool for about 30 minutes.

    For the cream, whip the cream with gelatin powder until stiff. Mix quark, powdered sugar, vanilla powder, and apple juice until smooth, then fold in the whipped cream.

    Tear the cake into small pieces and add to the cream mixture. Stir well. Using a tablespoon, scoop out 25 portions of the mixture, shape them into balls, roll each ball in coconut flakes, and place them in paper molds. Keep chilled until serving.
