Ingredients
- 300 g Turkey breast fillet
- 5 g cure salt
- 2 tsp Provençal herbs
- 2 tbsp plant oil
- 100 g lamb's lettuce
- 2 shallots
- 2 carrots
- 50 g black olives
- 3 tbsp white wine vinegar
- 1 tsp Mustard
- 5 tbsp olive oil
- salt (pepper)
Instructions

Wash the meat, pat dry and rub all sides with cure salt. Cover and refrigerate for 24 hours.

Heat herbs in a wok, place rack, lay turkey breast on it and smoke covered for 15 minutes.

Heat oil in a pan and sear the meat all around for 10 minutes. Wash and clean the salad. Peel shallots and dice finely. Peel carrots, wash and cut into thin strips. Pit olives. For the vinaigrette mix vinegar, oil, mustard, salt and pepper and combine with the salad, olives, shallots and vegetables.

Slice turkey breast into thin shavings and arrange on top of the salad.
