- mayonnaise (for garnish)
- 2 Radishes
- 0.5 shallot
- 300 g quark
- 3 tbsp yogurt
- 4 tbsp freshly chopped herbs (chives and parsley)
- Salt
- Pepper
- Lemon juice
Instructions
-
1.
For the caterpillars, peel, wash, and boil the potatoes in a pot of boiling salted water for 10-15 minutes. Check with a knife if they are cooked. Drain. Wash the tomatoes and leave the greens. Warm the sausages in simmering water as desired.

2.
For the quark dip, wash and trim the radishes and dice them very small. Peel and finely dice the shallot. Mix both with the quark, yogurt, and herbs until smooth, then season with salt, pepper, and lemon juice.
-
3.
To assemble the caterpillars, skewer one tomato on a skewer for each caterpillar head. Then thread four potatoes onto the skewer. The sausage forms the caterpillar’s tail. Paint the face of the caterpillar on the tomato with mayonnaise, and decorate the back with small mayonnaise dots. Serve the finished caterpillars with the quark dip and optionally fresh field salad.
