Green Vegetable Salad

Ingredients

  • 300 g green asparagus
  • 300 g green beans
  • Salt
  • 400 g broccoli florets
  • 200 g white beans
  • 1 handful chives
  • 3 shallots
  • 1 tsp Mustard
  • 4 tbsp sherry vinegar
  • 2 sugar
  • 30 ml walnut oil
  • 30 ml grape seed oil
  • pepper (ground)

Instructions

    Wash, trim the lower 2 cm of the green asparagus and clean the green beans. Blanch asparagus and beans in boiling salted water for 6–8 minutes, then immediately shock in ice water.

    Blanch broccoli and white beans for about 5 minutes, then cool them in ice water. Pinch each white bean between thumb and forefinger to crack the tough outer skin and remove it.

    Wash chives, shake dry, and cut into small rolls. Peel and finely chop shallots. Whisk mustard with vinegar and sugar. Drizzle both oils in a thin stream while whisking the vinaigrette until emulsified. Season with salt and pepper, add shallots and chives. Drain vegetables, mix, divide into bowls, and drizzle with vinaigrette.
