- 400 g puff pastry
- flour (for the work surface)
- 6 chives stalks
- 8 eggs
- 30 ml milk
- Salt
- Pepper (freshly ground)
- 1 tbsp butter
- 150 g smoked salmon (sliced)

Preheat oven to 210°C (410°F) with upper and lower heat. Roll out puff pastry on a floured work surface into a rectangle, cut into eight equal squares, arrange on a baking sheet lined with parchment paper, and bake in the preheated oven for about 20 minutes until golden brown.

Meanwhile, wash the chives, pat dry with kitchen paper, and cut into small rings. Whisk eggs with milk, season with salt and pepper. Heat butter in a non-stick pan and cook the eggs for 3–4 minutes to make scrambled eggs.

Slice salmon into strips. Arrange four puff pastry squares on a plate, spread scrambled eggs over them, top with salmon strips, sprinkle chives, and cover with remaining puff pastry squares.
