Smoked Salmon with Arugula and Strawberries

Ingredients
- 350 g smoked salmon
- 300 g Strawberries
- 150 g arugula
- 1 tsp Honey
- 1 tsp sharp mustard
- 4 tbsp white balsamic vinegar
- 6 tbsp Olive oil
- Sea salt
- colored pepper (freshly ground)

Arrange the salmon slices side by side on four plates. Wash, clean and quarter the strawberries. Rinse the arugula, spin dry, discard stems and tear into small pieces. Whisk together honey, mustard and balsamic vinegar. Pour in the olive oil while stirring gently. Season with sea salt. Combine the arugula and strawberries and place them on top of the salmon in the center of each plate. Sprinkle with colored pepper and serve the honey-mustard dressing alongside.
