Ingredients

  • 800 g firm potatoes, peeled and grated
  • 2 large carrots, peeled and finely grated
  • 1 onion, peeled and finely grated
  • 1 egg (medium size)
  • 2 tbsp flour
  • salt and freshly ground pepper to taste
  • 50 g clarified butter
  • parsley for garnish

Instructions

    Peel, wash, and coarsely grate the potatoes. Peel and finely grate the carrots. Peel and finely grate the onion.

    Combine the potatoes, most of the carrot grating (reserve 4 tbsp), and onion with the egg and flour in a bowl. Season with salt and pepper.

    Heat clarified butter in a non‑stick skillet. Fry spoonfuls of the batter into small golden potato pancakes. Serve garnished with carrot shreds and parsley.
