Ingredients
- 2 kg white asparagus
- Salt
- 2 Avocados
- juice of 1 orange
- Cayenne pepper
- 2 Spring Onions
- 50 g soft butter
- 4 slices Whole grain toast
- juice of 1 lemon
- 3 tbsp oil
- ground black pepper

Peel the asparagus and trim the ends. Boil in salted water for 12-15 minutes.

Halve the avocados, remove the pit, scoop out the flesh into a blender. Add orange juice and blend until smooth. Season with salt and cayenne pepper.

Trim, wash, and finely chop the spring onions. Stir into the butter and season with salt. Toast the whole grain bread. Whisk lemon juice with oil, salt, and pepper. Drain the asparagus, let it dry, and arrange on a platter. Drizzle the lemon vinaigrette over it.

Spread the spring onion butter onto the toast. Serve the toast and avocado dip alongside the asparagus.
