Smoked Salmon Sandwich with Sprouts

Ingredients
- 3 pickles
- 1 head romaine lettuce
- 1 Avocado
- 8 slices whole grain toast
- 80 g light cream cheese
- 40 g alfalfa sprouts
- 120 g smoked salmon

Drain the pickles, pat dry with paper towels, and slice lengthwise into thin rounds. Tear the romaine lettuce into leaves, wash, and spin dry. Halve the avocado, remove the pit, and scoop out the flesh with a tablespoon. Slice the avocado flesh into strips.

Spread cream cheese on four slices of toast. Rinse the sprouts in a sieve, drain well. Sprinkle the sprouts over the cream cheese, then layer lettuce, pickle rounds, smoked salmon, and avocado strips. Top each sandwich with another slice of toast. Cut diagonally to serve.
