Ingredients
- 1 Spring onion
- 125 g mascarpone
- 1 tsp Mustard
- 1 tsp horseradish (jarred)
- 1 tsp grated lemon zest
- 350 g smoked salmon (slices)
- 0.5 bunch Chives
- 2 untreated lemons
- 1 box watercress

Wash the spring onion, trim ends and slice into thin rings. Mix with mascarpone, mustard, horseradish, lemon zest, salt and pepper. Depending on size, place about 2 salmon slices slightly overlapping between sheets of cling film.

Roll over with the dough, remove the film and place 1 tsp cream in the center of each. Using the lower sheet, fold the salmon slices over the cream into a parcel. Blanch chives briefly in boiling water, shock in cold water and pat dry.

Wrap each parcel with two chive bundles. Slice lemon thinly, arrange on plates and set the parcels on top. Garnish with trimmed watercress.
