Smoked Salmon Potato Salad

Ingredients
- 700 g firm potatoes
- Salt
- 2 small onions
- 90 ml meat broth
- 1 bunch radishes
- 300 g smoked salmon (slices)
- 8 leaves Lollo Rosso lettuce
- 2 tbsp coarsely chopped parsley
- 1 tbsp mint
- Basil
- 3 tbsp olive oil
- 2 tbsp lemon juice
Instructions

Wash the potatoes and cook them in boiling salted water for about 25 minutes. Drain, rinse with cold water, let drain and peel. Peel the onions and slice into thin rings. Bring the broth to a boil in a pot, add the onion rings and steam until soft.

Cut the potatoes into bite‑sized chunks, mix with the broth, and let stand for 20 minutes.

Wash, trim, halve, and slice the radishes into thin rounds. Cut the salmon into bite‑sized pieces. Wash, dry, and tear the lettuce leaves.

Combine the radishes, salmon, herbs, olive oil, and lemon juice with the potatoes, season with salt and pepper, taste, and serve in bowls.
