Ingredients
- 0.5 honeydew melon
- 50 ml Prosecco
- lime wedges
- 2 tsp horseradish (fresh grated or jarred)
- 4 tbsp quark
- Salt
- pepper (ground)
- Cayenne pepper
- 4 trout fillets
- 1 Papaya
- 1 bunch spring onions
- 2 tbsp chives in rings
- lime slice for garnish

Peel, deseed the melon and puree the flesh with a stick blender. Stir in Prosecco, lime juice, horseradish and quark until smooth. Season the sauce with salt, pepper and cayenne pepper.

Divide trout fillets into bite-sized pieces. Peel, deseed the papaya and cut the flesh into about 1 cm cubes. Trim, wash and slice spring onions into thin rings. Mix trout, papaya, spring onions and chives; place on a plate. Drizzle sauce over the salad, let rest for 10 minutes, then serve garnished with lime slices.
