Ingredients
- 60 g buckwheat flour
- 40 g all-purpose flour
- Salt
- 10 g fresh yeast
- 125 ml lukewarm milk
- 2 tbsp liquid butter
- 2 egg whites
- butter fat
- 400 g smoked salmon (sliced thin)
- 50 g sour cream
- dill sprigs (for garnish)
- Lemon zest (for garnish)

Separate the eggs. Mix the flours together. Dissolve the yeast in the milk and stir into the flour mixture with liquid butter, egg yolks, and a pinch of salt; cover and let rise in a warm place.

Beat the egg whites until stiff and fold them into the dough before baking.

Heat some butter fat in a pan, drop spoonfuls of dough, flatten slightly, and fry until golden brown on both sides; keep warm.

For serving spread blinis with a little crème fraîche, roll salmon slices over them, arrange on the blinis, and garnish with dill sprigs and lemon zest.
