Ingredients
- 250 g ricotta
- 1 tsp freshly grated horseradish
- 2 tbsp yogurt
- 1 tbsp freshly chopped dill
- Salt
- Pepper (freshly ground)
- a splash of lemon juice
- 1 smoked eel (about 400 g)
- fresh dill sprigs for garnish
Instructions

Whisk the ricotta with horseradish, yogurt, dill, salt, pepper and a splash of lemon juice until smooth and season to taste.

Cut the eel into pieces and arrange on a plate. Spoon a dollop of horseradish cream onto each piece and garnish with fresh dill. Serve the remaining dip in a small bowl alongside.
