Ingredients

  • 125 g mixed candied fruits (finely diced)
  • 40 ml orange liqueur (e.g., Grand Marnier)
  • 30 g pistachio nuts
  • 30 g pine nuts
  • 30 g almond kernels
  • 50 g dark chocolate
  • 200 g sugar
  • 2 packets vanilla sugar
  • 4 sheets gelatin
  • 750 g ricotta
  • 100 g honey

Instructions

    Coat the candied fruits with orange liqueur and let them soak. Chop pistachios, pine nuts, almonds, and chocolate finely. Reduce sugar, vanilla sugar, and 7 tbsp water in a saucepan to a syrupy consistency.

    Soak gelatin sheets in cold water.

    Whisk ricotta into the syrup. Melt gelatin in a small pot over low heat until liquid; stir in 3 tbsp of ricotta, then mix with remaining ricotta. Fold in soaked candied fruits, soaking liquid, chopped nuts, and chocolate into the ricotta mixture.

    Rinse a bowl of about 1.5 L with cold water. Pour the mixture into the bowl, smooth the surface, cover with cling film, and chill for about 3 hours until set.

    Dissolve honey in 50 ml water over low heat while stirring. When serving, spoon a bit of honey sauce onto each plate. Cut the Cassata into pieces, place on cookies, garnish with candied fruits, and arrange on plates.
