Vegetable Soup with Cabbage

Ingredients
- 120 g alphabet-shaped whole wheat noodles
- Salt
- 200 g carrots
- 250 g celery root
- 200 g leek
- 250 g Chinese cabbage
- 200 g green bell pepper
- 1 tbsp Rapeseed Oil
- Pepper
- 1.5 l Mediterranean vegetable broth
- 1 bunch parsley
Instructions

Cook the noodles according to package instructions in salted water until al dente.

In the meantime, peel, wash, and dice the carrots and celery root into 5 mm cubes.

Peel, wash, halve, and slice the leek into rings.

Peel, wash, drain the Chinese cabbage in a sieve, and cut it into thin strips.

Halve, deseed, wash, and slice the bell pepper into thin strips.

Drain the noodles in a sieve, rinse cold, and drain well.

Heat the oil in a pot. Sauté the carrots and celery root over medium heat for 2 minutes.

Add the bell pepper and Chinese cabbage and sauté briefly. Season with salt and pepper, add the broth, and let it cook for 10 minutes over medium heat.

Add the leek and cook for another 4 minutes. In the meantime, wash, shake dry, and finely chop the parsley.

Add the noodles to the vegetable soup and heat through briefly. Pour the vegetable soup into a terrine, sprinkle with parsley, and serve.
