Small Yorkshire Puddings with Steak and Onion Sauce

Ingredients
- 150 ml milk
- 1 egg
- 1 yolk
- 80 g flour
- 250 g sirloin steak
- 70 ml plant oil
- 1 handful Arugula

Peel the onions and cut them into strips. Add butter to a hot pot, melt it and lightly brown it. Add the onions, sugar, salt and pepper, stir in, and reduce heat. Simmer gently for about 20 minutes, stirring occasionally. Then pour in vinegar and wine and let simmer open and gently for another ~20 minutes. Taste, transfer, and cool.

Preheat the oven to 200°C (Oven + fan).

Whisk milk with egg, yolk and flour well. Let rest for about 10 minutes.

Meanwhile wash the meat, pat dry and add 1 tbsp oil to a hot pan. Sear the steak 2‑5 minutes per side. Then wrap in foil and let rest for ~15 minutes.

Oil the depressions of 24 small tins (e.g., mini muffin tin). Heat in the oven for about 5 minutes. Quickly fill each cup about 2/3 full with batter and bake in the oven for ~20 minutes until golden brown.

While the puddings bake, slice the meat into 24 thin strips. Wash and dry the arugula. Fill the finished puddings immediately with the meat and onion marmalade and garnish with arugula before serving.
