Ingredients
- 50 g walnuts
- 1 handful parsley
- 100 g wheat semolina
- 150 g wheat flour
- 200 ml milk
- 200 ml whipping cream
- 4 eggs
- Salt
- Pepper
- Worcestershire sauce
- 350 g brown mushrooms
- 2 tbsp butter

Coarsely chop the walnuts and wash, dry, and chop the parsley.

Whisk the semolina with the flour, milk, and cream until smooth. Stir in the eggs and nuts. Season with salt, pepper, and a few dashes of Worcestershire sauce.

Clean the mushrooms thoroughly and slice them. In a large pan, sauté in melted butter for 1-2 minutes. Pour the batter over the mushrooms, let it set for 2-3 minutes, then brown on one side. Flip, cook another 2-3 minutes until golden brown, and break into pieces with a fork. Sprinkle parsley on top and serve on bowls. A fresh field salad pairs well.
