Pancakes with Goat Cream Cheese and Peas

Ingredients
- 2 Eggs
- 250 ml milk
- Salt
- 125 g flour
- butter (for frying)
- 250 g pea pods
- Salt
- 1 handful pea shoots
- 250 g goat cream cheese
- pepper (ground)
- 4 tsp liquid honey
Instructions

Whisk the eggs with the milk, a pinch of salt and the flour into a smooth batter. Let rest for about 10 minutes. Then add a little butter to a hot pan and pour in about 1/4 cup of batter. Cook for about 1 minute until golden brown, flip and finish cooking. Repeat with the remaining batter. Keep finished pancakes warm in an oven at 70°C if desired.

Wash, trim and blanch the pea pods in salted water for about 2 minutes. Cool them quickly, drain well and cut lengthwise in half. Rinse the shoots and pat dry.

Distribute the shoots and pods over the pancakes. Crumble the cheese on top, season with pepper and drizzle with honey before serving.
