Small Puff Pastry from Crete

Ingredients

  • 450 g puff pastry (frozen)
  • 300 g fresh young spinach leaves
  • 1 Shallot
  • 1 Garlic clove
  • olive oil
  • Salt
  • Pepper (freshly ground)
  • Nutmeg (freshly grated)
  • 150 g feta cheese
  • flour (for the work surface)
  • 1 egg (separated)
  • 5 tbsp light sesame seeds

Instructions

    Let the puff pastry thaw.

    Preheat the oven to 200°C with upper and lower heat.

    Wash, rinse, dry spinach. Peel shallot and garlic, finely chop and sauté in a hot pan with 2 tbsp oil until translucent. Add spinach, let it wilt, season with salt, pepper, a pinch of nutmeg, remove from heat. Crumble feta cheese.

    Roll out puff pastry on floured surface thinly and cut circles (~7 cm diameter). Distribute some spinach in the center of each circle, sprinkle with feta, brush edges with egg white. Fold circles into half-moons, press edges firmly, place parcels on a parchment-lined baking sheet. Brush with egg yolk and sprinkle light sesame seeds.

    Bake in preheated oven 25-30 minutes until golden yellow. Remove, let cool slightly, serve.
