Ingredients

  • 24 chicken wings
  • 2 tbsp sesame oil (or rapeseed oil)
  • 4 tbsp ketchup
  • 1 tsp Mustard
  • 1 tsp Honey
  • Salt
  • black pepper (freshly ground)
  • 2 tbsp sesame seeds
  • 2 tbsp lemon juice
  • 1 tbsp sesame oil (or corn germ oil)
  • 1 tbsp White Wine Vinegar
  • Salt
  • black pepper (freshly ground)
  • sugar
  • 400 g black salsify

Instructions

    Wash the chicken wings, pat dry and season with salt and pepper. Whisk ketchup with oil, mustard, and honey, then brush the wings with this mixture. Sprinkle sesame seeds on top.

    Place the wings on a baking sheet lined with foil and bake in a preheated oven at 220°C (middle rack) for about 25 minutes.

    For the black salsify salad, mix sesame oil with white wine vinegar and season with salt, sugar, and pepper. Bring a pot of about 2 liters of water to boil. Add lemon juice and salt. Brush the black salsify sticks under running water and peel them. Use a paring knife to cut thin longitudinal slices and immediately drop them into the boiling water. Blanch for about 1 minute, then remove and immediately mix with the dressing while still dripping wet.
