Ingredients
- 450 g whole wheat flour (and a little extra for the work surface)
- 80 g coconut palm sugar (4 tbsp)
- 180 g butter
- 1 pinch salt
- 1 egg
- 60 g walnut kernels
- 800 g plums

Knead flour, sugar, butter, a pinch of salt and the egg quickly into a smooth dough and shape it into a ball. Wrap in cling film and let rest in the refrigerator for 1 hour.

Meanwhile chop walnuts roughly. Wash, halve and pit the plums. Line four oven‑proof ramekins (15 cm diameter) with parchment paper.

Divide the dough into quarters. On a floured surface roll each piece into circles of 15 cm diameter. Distribute the plums in the center of each circle, leaving about a 3 cm border.

Sprinkle walnuts over the fruit. Fold the edges over the plums and place the galettes into the ramekins. Bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for about 25 minutes until golden brown. Split in half and serve warm or cooled.
