- 2 Eggs
- 250 ml milk
- 150 g flour
- 1 heaping tsp baking powder
- 1 pinch salt
- vegetable oil (for frying)
- 150 g crème fraîche
- 300 g smoked salmon (thin slices)
- lemon zest
- dill sprigs

Whisk the eggs, add the milk, then stir in the flour, baking powder and salt to make a smooth batter. Let it rest for about 10 minutes. Heat oil in a pan and cook small pancakes in batches, turning them when golden brown on one side.

For each pancake pour a tablespoon of batter into the pan and fry for about 1 minute until golden brown, flip and cook another minute. To serve spread crème fraîche on each pancake, season with pepper, roll smoked salmon on top, and garnish with lemon zest and dill sprigs.
