Honey Cake Figures
The figures made from honey cake dough are always a hit during the Christmas season!
Ingredients
- 150 g butter
- 300 g honey
- 120 g whole cane sugar
- 180 g ground almonds
- 450 g spelt flour type 1050
- 1 tsp cinnamon powder
- 2 tsp gingerbread spice
- 1 tsp lemon zest
- 1 egg
- 1 tsp potash
- 2 tbsp milk (3.5% fat)
- 30 g nuts (e.g., walnuts, almonds, pine nuts)
Instructions

Add the butter pieces with honey and whole cane sugar to a saucepan and heat while stirring until the sugar dissolves. Transfer to a large mixing bowl and let cool. Then add the almonds, flour, all spices, and egg, and knead thoroughly with a hand mixer (kneading attachment), adding more flour if needed. Whisk the potash in a small bowl with milk until smooth. Add this mixture to the dough and continue kneading until the dough shines and no longer sticks.

Cover the bowl and let rest overnight in the refrigerator.

Line a baking sheet with parchment paper. Roll out the dough on a floured work surface and cut or stamp figures as desired. Place them on the baking sheet, topping with nuts if desired. Bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for 15–20 minutes.
