Small Brioche

Ingredients
- 500 g flour
- 0.5 cube fresh yeast (ca. 21 g)
- 250 g butter
- 40 g sugar
- 1 tsp salt
- 5 eggs
- flour (for working)
- 2 egg yolks
- 2 Tbsp whipping cream

Sift the flour onto a work surface and form a well in the middle. Crumble the yeast into it and mix with 3-4 tbsp lukewarm water. Add the butter pieces, sprinkle sugar and salt. Pour the eggs into the center. Knead all ingredients into a smooth dough. If necessary, add a little more water or flour. Cover and let rise for about 20 minutes. On a floured surface knead again and cover for another ~20 minutes.

Shape the dough into a rope and divide into roughly 20 pieces. Roll each into a ball and place on a baking sheet lined with parchment paper. Cut crosswise and cover for another ~20 minutes.

Preheat the oven to 200°C (400°F) with fan and top heat.

Whisk the egg yolks with cream and brush over the brioche. Bake in the oven for about 20 minutes until golden brown (test with a skewer). Remove from oven and let cool on the sheet.
