Small Brioche

Ingredients
- butter
- 500 g flour
- 30 g yeast
- 3 tbsp lukewarm milk
- 1 tsp sugar
- 200 g room‑temperature butter
- 4 eggs (size M)
- Salt
- flour (for dusting)
- 1 egg yolk

Grease small molds with butter. Sift the flour into a bowl and make a well in the center. Break in the yeast, then stir in the milk, sugar and a little flour. Cover the pre‑mix and let it rest for 15 minutes.

Add the butter, eggs, and a pinch of salt to the pre‑mix and knead everything well. Cover the dough and let it rise for another 30 minutes.

On a floured surface roll the dough into a long rope, then shape 20 large and small balls from it. Place the large balls in the molds, press a depression in the center, and brush with beaten egg yolk; place the small balls in the depression. Brush the whole brioche with the remaining yolk and let rise for another 10 minutes.

Preheat the oven to 220 °C (gas 3–4, fan 200 °C). Bake the brioche on the second rack from below for 15–20 minutes. Remove finished brioche, let it cool slightly, take them out of the molds, and serve warm.
