Sliced Turkey with Apple and Rice Noodles
Sliced turkey with apple and rice noodles is quick to make and always well received.
Ingredients
- 500 g turkey cutlets
- 20 g ginger (1 piece)
- 2 Garlic cloves
- 1 bunch scallions
- 5 g coriander (4 stems)
- 4 tbsp peanut oil
- 2 Apples
- 200 g wide rice noodles
- 0.5 tsp Curry Powder
- 3 tbsp Lime juice
- 3 tbsp Soy sauce
- Pepper
- Cayenne pepper

Rinse the meat, pat dry and slice into 1 cm thin strips. Peel ginger and garlic, finely mince both. Trim scallions, wash and cut into rings. Wash coriander and pat dry.

Heat 2 tbsp oil in a large pan and sear the meat on both sides for 2–3 minutes over high heat. Meanwhile wash apples, quarter, core and slice into thin strips. Remove meat and keep warm. Heat 1 tbsp oil and sauté apple slices for 2 minutes over medium heat. Add scallions and cook for 1 minute. Then remove everything from the pan and set aside.

Cook rice noodles according to package instructions in plenty of boiling salted water until al dente.

Add remaining oil to the pan. Sauté garlic and ginger for 2 minutes over medium heat. Stir in curry powder and cook for 1 minute, then deglaze with lime juice and soy sauce, seasoning with pepper and cayenne pepper. Bring everything to a boil for 1 minute, remove from heat, return the meat and stir it through.

Drain noodles, let them drain briefly and plate. Top with apple slices and meat, garnish with coriander leaves.
