Fruitful Turkey Pumpkin Curry

Ingredients
- 500 g pumpkin flesh
- 10 dried apricots
- 500 g Turkey breast fillet
- 2 tbsp oil
- 1 tbsp curry powder
- 1 can unsweetened coconut milk (400 ml)
- Salt
- black pepper (freshly ground)
- 2 tbsp finely chopped cilantro green
- 250 g Thai fragrant rice

Place the rice in a sieve, rinse with cold water and bring to a boil in slightly salted water at about twice the volume; cover and simmer over low heat for approximately 20 minutes.

Cut the turkey and pumpkin flesh into large bite-sized cubes. Halve the apricots. Heat oil in a pot, add curry powder and stir into the oil. Remove 5 tbsp of the thicker layer from the top of the coconut milk, stir it back in, and let simmer over low heat for 1 minute.

Add the turkey, pumpkin, apricots, and remaining coconut milk to the pot; simmer gently with stirring for 15 minutes, seasoning with salt and pepper, then fold in cilantro. Serve with rice.
