Asian-Style Creamy Turkey Stir-Fry with Rice

Ingredients
- 500 g Turkey breast fillet
- 1 onion
- 2 Garlic cloves
- 2 tsp freshly grated ginger
- 1 red chili pepper
- 200 g basmati rice
- 3 tbsp Sesame oil
- 0.5 untreated lime
- 800 ml coconut milk
- 200 g peas (frozen)
- soy sauce
- raw sugar
- Salt
- coriander leaves

Wash turkey breast fillets, pat dry and cut into short, thin strips.

Peel onion and garlic cloves and dice them finely.

Wash chili pepper, halve it lengthwise, deseed and slice into fine strips.

Cook rice in salted water according to package instructions.

Grate the zest of 1/2 lime, squeeze out the juice. Add 2 tbsp sesame oil to a wok or larger pan and heat. Briefly sauté garlic, onion cubes, ginger powder, chili slices and lime zest in the oil. Pour in coconut milk and simmer on low for about 10 minutes. After about 5 minutes add frozen peas. Then add turkey strips and let them cook in the sauce for a few minutes. Season everything with salt, sugar, lime juice and soy sauce.

Serve the stir-fry over rice. Garnish with coriander leaves.
