Ingredients
- 100 g cooked chicken breast slices
- 2 bell peppers (1 small red and 1 small yellow)
- 2 Spring Onions
- 2 tbsp olive oil
- 1 tbsp White Wine Vinegar
- 1 tbsp Lemon Juice
- 1 tbsp capers
- Salt
- black pepper (freshly ground)
- 2 sprigs Basil
Instructions

Arrange the sliced chicken on two plates in a slightly overlapping fashion. Cut the bell peppers in half, remove seeds and membranes, wash, and dice finely. Wash and trim the spring onions, then slice into rings.

Sauté the bell peppers and spring onions in 1/2 tbsp olive oil for 2 minutes. Remove from heat. Stir in vinegar, lemon juice, capers, remaining oil, salt, and pepper.

Drizzle the vinaigrette over the chicken slices. Rinse the basil leaves, pat dry, tear into pieces, and sprinkle over the chicken breast. Serve with a small slice of whole‑grain bread.
