Ingredients

  • 100 g Mascarpone
  • 100 g yogurt
  • 1 tsp Pink peppercorns
  • 1 tsp Honey
  • 1 tsp Lime juice
  • Salt
  • 500 g chicken breast fillet
  • 60 g peanut butter (fine)
  • 1 splash lime juice
  • Salt
  • pepper (ground)
  • 100 g peanut kernels
  • 4 tbsp soy oil

Instructions

    For the dip, whisk mascarpone with yogurt. Coarsely crush pink peppercorns in a mortar. Stir together with honey and season with lime juice and salt.

    Rinse the meat and pat dry. Warm the peanut cream in a small pot until melted. Season with lime juice, salt, and pepper. Chop peanuts finely. Coat chicken strips all over with the cream and roll them in peanuts. Fry in hot oil in a non-stick pan for about 6 minutes on each side.

    Plate the chicken fillets with the dip. Garnish with Asian herbs as desired.
