Sirloin Steak auf Jäger-Art

Ingredients
- 1 Sirloin-Steak (1.5 kg heavy and 5 cm thick)
- Pepper (freshly ground)
- 2 Garlic cloves
- 1 tsp rosemary powder
- sunflower oil
- Salt
- 400 g Mushrooms
- 300 g oyster mushrooms
- 1 Tbsp clarified butter

Preheat the oven to 180°C fan-forced.

Wash the meat briefly under cold water and dry it, then tie with kitchen string. Peel the garlic and rub it on the meat, then season with black pepper and rub in the rosemary powder. Let rest for 10 minutes.

Heat 3 tbsp oil in a large pan and sear the steak on all sides, then place on an oven rack (cover the fat pan with foil underneath) and bake for about 50 minutes. Use a meat thermometer to check the internal temperature; at 55°C it is medium. Let rest for another 5-10 minutes in the open oven.

Meanwhile clean the mushrooms and cut them in half if desired. Heat clarified butter in a pan and sear the mushrooms until golden, seasoning with salt and pepper.

Plate the steak on a preheated plate and serve covered with the mushrooms.
