- 2 sticks celery stalks
- 2 Spring Onions
- 1 tbsp butter
- 1 tsp flour
- 200 ml milk
- 200 g Cream cheese
- freshly ground pepper
- 300 g pork tenderloin
- Salt
- 1 tbsp oil
- wooden skewers

Rinse the celery and finely chop it. Clean, wash, and finely slice the spring onions as well. Heat the butter in a small saucepan. Briefly sauté the celery and spring onions in it. Sprinkle the flour over them. Pour in the milk and bring to a boil. Stir in the cream cheese. Season with pepper. Keep the sauce warm.

Slice the pork tenderloin into about 2 cm thick pieces. Season with salt and pepper. Heat oil in a non-stick pan. Sear the pork medallions on both sides, then cook over medium heat for 5 minutes more, turning them halfway through. Thread the medallions onto wooden skewers and serve with the celery‑cheese sauce.
