Simple peanut cookies from Spoonsparrow: The tasty cookies are easy to make: just roll out the dough, cut shapes, bake – and enjoy!

Ingredients

  • 100 g roasted unsalted peanuts
  • 200 g butter
  • 125 g raw cane sugar
  • 0.5 tsp vanilla powder
  • 1 egg
  • 1 pinch salt
  • 100 g spelt flour type 1050
  • 100 g cornstarch

Instructions

    Finely chop the peanuts in a food processor, stand mixer or with a stick blender into a high container. Knead the ground peanuts with butter, sugar, vanilla powder, egg, salt, flour and starch. Wrap the dough in plastic wrap and refrigerate for 30 minutes.

    Roll out the dough to 4–5 mm thickness in portions. Cut circles (about 5 cm diameter) with a cookie cutter or glass and place on a baking sheet lined with parchment paper. Optionally press a pattern into each cookie.

    Bake the simple peanut cookies in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for 10–12 minutes.
