Smoked Fish-Leek Pastry

Ingredients
- 150 g flour
- 80 g cold butter
- 1 egg
- Salt
- 2 stalks leek
- 1 tbsp butter
- 150 g Smoked salmon
- 150 g smoked mackerel fillet
- 2 Eggs
- 100 g crème fraîche
- 100 ml whipping cream
- Pepper
- nutmeg
- 1 egg yolk
- 2 tbsp milk

For the dough, sift flour onto a work surface, create a well in the center, spread butter pieces around the edge, and add the egg and 1 tsp salt into the well. Quickly knead with hands into a smooth dough, wrap in cling film and refrigerate for about 1 hour.

For the filling, cut leek lengthwise, wash, trim, and slice into strips. Heat butter and sauté leek for about 5 minutes. Remove from heat and let cool.

Break smoked salmon and mackerel fillets into small pieces and mix with leek.

Whisk eggs with crème fraîche and cream, season lightly with salt, pepper, and nutmeg.

Preheat oven to 200°C (400°F) with upper and lower heat and line a deep baking tray (≈20x20 cm) with parchment paper.

Roll about two-thirds of the dough into a size slightly larger than the tray, place it on the tray, forming a border. Spread fish-leek filling over it and pour the egg-cream mixture on top.

Roll remaining dough and cut into strips (~1 cm wide). Arrange the dough strips in a lattice pattern over the pastry. Whisk egg yolk with milk and brush over the lattice.

Bake in oven for about 45 minutes until golden brown.

Remove and serve warm or cold, sliced into pieces as desired.
