The Simple Grünkern Salad from Spoonsparrow keeps you full for a long time thanks to its high fiber and protein content.
Ingredients
- 200 g grünkern
- Salt
- 400 ml Chicken broth
- 250 g Chicken breast fillet
- 4 plums
- 1 Red Onion
- 1 Organic Orange
- 0.5 bunch arugula (40 g)
- 1 Handful Parsley (5 g)
- 2 sprigs thyme
- 2 tbsp pistachio kernels (15 g each)
- 3 tbsp olive oil
- 2 tbsp liquid honey
- 3 tbsp white balsamic vinegar
- 250 g labneh (drained) or alternatively Greek yogurt

Cook grünkern in boiling salted water for about 45 minutes. Then drain in a colander, let it drip and cool briefly.

Meanwhile bring the broth to a boil. Add the chicken meat and simmer on low heat for about 10 minutes until cooked through. Remove from the stove and allow the chicken to cool in the broth. Then shred or slice the meat into fine strips.
